Gluten-Free Savoury Veggie & Quinoa Muffins

Babyled weaning? Or just looking for a handy, healthy snack? Give these bad boys a whirl!
1/4 cup + 1 tbsp Grated Parmesan Cheese
1/4 cup Ground Almonds
2 Eggs
1/4 tsp Garlic Granules
Black Pepper
 Preheat oven to 175 C and grease a muffin tin with oil or butter.
Heat two pouches according to instructions on back of pack. mash with the back of a fork and allow to cool. 
Once cooled, combine with cheese, almond flour, egg, garlic granules, and fresh ground pepper to taste. 
Spoon into greased muffin tin and bake for 10 minutes. Remove from oven and allow to cool entirely before enjoying!

    If replacing the ground almonds so that these muffins are no longer gluten free, what amount would you recommend using and would this still work with the remaining ingredients and same method?

  • Hey there! We’d advise using either a flax egg, or if dairy isn’t an issue then you can increase the amount of ground almond by about a Tbsp and sub 1/4cup of greek yogurt!
