Mamamade Beetroot Risotto - A 100% Organic Fam-Fave At Dad's Table Recipe

We've got another Mamamade inspired recipe from At Dad's Table 🙌🏼 The talented Adam Shaw is bringing us a new fam-fav using our Mamamade Beetroot Purée! Yes, it's possible, and he's here to tell you how to make some Beetroot Risotto that is delicious for the whole family.

If you don't already know about him, he's an author, the founder of At Dad's Table, and a dad to 2 little pocket rockets aged 2 and 4, with another one on the way very soon! Adam's style of cooking can only be defined as fun, feel-good and delicious family food 💜

This recipe is a go-to for those nights where you want to try something different or if your little one has moved past the purée stage, but you've still got some 100 % organic Mamamade pots leftover in the freezer. Right, so let's get to the point, Adam take it away...

HOW TO MAMAMAKE BEETROOT RISOTTO, PERFECT FOR THE WHOLE FAMILY!

Serves 4, though half the quantity if you wish to make less!

What you need:

  • 2x defrosted Mamamade Beetroot Purée

  • 1 red onion

  • 2 cloves of garlic

  • 1 teaspoon of dried rosemary

  • 1 knob of butter

  • 300g risotto rice

  • 800ml low-salt vegetable stock

  • Juice of 1 lemon

  • 100g grated parmesan cheese

  • Rapeseed oil

How to make:

  1. Dice the onion and fry in a splash of rapeseed oil for 3-4 minutes. Crush and chop the garlic, then add to the pan along with the butter and dried rosemary.

  2. Allow the butter to melt, then add the risotto rice to the pan. Stir well to ensure the rice is coated with the butter.

  3. Add ladle after ladle of the stock to the pan, waiting until most of the liquid has been absorbed before adding the next. This will take around 17 minutes.

  4. Stir the defrosted beetroot purée into the risotto and add the juice of 1 lemon. Cook for a further 2 minutes before turning off the heat, adding the parmesan and serving.
