Dairy-Free and Gluten-Free Mac & Cheese Recipe for Toddlers
The number of times you've all confessed that you've been eating your Toddler's Mac&'Cheese'....I couldn't resist sharing a version of the recipe that you can make for the whole family!
This twist on the classic comfort food is dairy-free, egg-free, gluten-free, meat-free...talk about fun for the whole family! Whilst this recipe for vegan mac & cheese has cashews, our packaged-up toddler version is completely free from nuts - just something to note if there are any nut allergies!

HOW TO MAMAMAKE VEGAN & GLUTEN-FREE MAC & CHEESE WITH CASHEWS
Serves 2 adults and 2 kids, with enough leftover for 2 kids lunches
What you need:

1 box of pasta

1 cup raw, unsalted cashews

1 medium onion, chopped

3 cloves of garlic, chopped

2 Tbsp Olive Oil, Avocado Oil, or Coconut Oil

1 cup low-sodium stock
-
1/2 cup dairy-free milk
-
1 tbsp gluten-free plain flour
-
2tbsp nutritional yeast
-
1 tsp ground cumin
-
1 tsp salt (omit if baby is under 12m)
- Gluten-Free breadcrumbs (optional)
How to make:

Bring a pan of salted water to the boil, add the pasta and cook according to the instructions

While that's cooking, soak the cashews in enough boiling water to cover, for about 20 minutes

Heat the oil in a pan over medium heat, then add the onion and garlic and sauté until softened and browned - about 10 minutes.

Transfer the onion and garlic to a blender, and add in the rest of the ingredients. Blend until smooth.
- Combine with the pasta in an oven-proof dish, then cover with breadcrumbs if using.
- Bake in a 180 degree oven for 10-15 minutes, until browned and bubbling.
- Let cool and serve!
