Did you know that our Butternut Squash Purée could be turned into a Vegan Butternut Squash Mac'n'Cheese Recipe 🤯 Yeah, we didn't believe it either, so let's dive right in and get cooking 🧑🏽🍳 A huge thank you to our very own nutritionist, Jenna Hope, for this yummy dish.
This recipe is perfect for you if your little one is past the Mamamade purée stage, but you've still got some pots in the freezer. Or if you've got an empty fridge and have no clue what to make for couples night 😅 We've all been there!
HOW TO MAKE VEGAN BUTTERNUT SQUASH MAC’N’CHEESE
Ingredients you’ll need:
✨ 1 pot of Mamamade Butternut Squash Purée
✨ 100g macaroni
✨ 1 teaspoon of olive oil
✨ 1 onion
✨ 1 tablespoon of garlic purée
✨ 1 tablespoon dairy-free yoghurt
✨ 2 tablespoons of nutritional yeast
✨ A touch of pepper!
How to cook!

Sauté the onion and garlic and add to a blender along with the Mamamade butternut squash puree, yoghurt, nutritional yeast and pepper.

Cook the macaroni as per the instructions on the packet.

Combine the sauce with the macaroni

Pour the mix into an oven-proof dish and place in the oven at 180°C for 10-12 minutes (avoid significant browning). Serve and enjoy!
💡 If you’re making this for yourself rather than your baby then you may want to add some salt, too.
