Guess who's back, back again with another Mamamake It Your Way recipe; it's Adam from At Dad's Table! 👀 You've all loved Adams cooking, so we had to get him back for one more recipe this month. Today he's bringing us a family-friendly twist on homemade Tzatziki with White Bean, Pea & Spring Onion Spiced Fritters, made using our Mamamade White Bean Purée! 👨🏽‍🍳  Yup, now that sounds like a winner for all ages, perfect for those family dinner nights, baby-led weaning lunches, on the go snacking or maybe just a recipe for you and your partner when the kids are tucked up in bed 💤

Mamamade White bean purée made into WHITE BEAN, PEA AND SPRING ONION SPICED FRITTERS WITH COCONUT + TURMERIC DIPPING YOGURT

HOW TO MAMAMAKE WHITE BEAN, PEA AND SPRING ONION SPICED FRITTERS WITH COCONUT + TURMERIC DIPPING YOGURT

Makes around 12 fritters.

What you need:

  • 2 x Defrosted Mamamade White Bean Purée

  • 100g peas

  • 4 spring onions

  • 1 clove of garlic

  • 2 teaspoons of turmeric

  • 1 teaspoon of cumin

  • 1 teaspoon of ground coriander

  • 1 egg

  • 100g gluten-free plain flour

  • 1 teaspoon of gluten-free baking powder

  • 100ml coconut yoghurt

  • Vegetable oil

How to make:

  1. Top and tail, then thinly slice the spring onions. Crush and dice the garlic, then place both in a large bowl along with the peas.

  2. Add 1 teaspoon each of turmeric, cumin and ground coriander.

  3. Add the white bean purée, then mix well.

  4. Add the egg, mix again, then sieve over the flour and baking powder.

  5. Mix one last time, then shape into discs and fry using vegetable oil for 3-4 minutes a side in a pan.

  6. When cooked, remove from the heat and place on kitchen paper to cool.

  7. Mix one teaspoon of turmeric into the coconut yoghurt, then serve.
